Salmon Inspiration Recipe

Less is more and with all these options you aren’t going to feel lacking in the flavor department. (You will be satisfied and full too.)

1. Baked salmon
2. Sweet potato fries
3. Salad with oil & vinegar dressing
4. All the sides of a salmon sandwich without the bun:
onion, cucumber, thick bacon, tomato
5. Dill Sauce

1. Baked salmon
Your choice of seasoning (I used CAJUN – SO GOOD)
Bake at 400 F for around 10 minutes
When you see white juice coming out of the fish (double check by cutting it and looking)

2. Sweet potato fries
There are a zillion recipes out there from frozen in a bag to homemade – it’s your move how you want to roll, no judgement here

3. Salad with oil & vinegar dressing
Chop romaine lettuce
Add some of the cucumber and tomatoes you already have
I used a Penzey’s Italian dressing with some vinegar and olive oil and tossed it (Love Penzey’s  Spices – they have fresher, higher quality spices and started locally in Wisconsin.)

4. All the sides of a salmon sandwich without the bun
onion, cucumber, thick bacon, tomato
Cut up the sides – thin sliced onion, slice the tomatoes, cut the cucumbers, fry up the bacon and pat well with paper towel to absorb the grease

5. Dill Sauce
1/2 cup or so of regular greek yogurt (make sure you read the label there’s been a few times we’ve accidently grabbed the honey Greek yogurt.
2 tablespoons or so of dill (the longer it sits the more the dill flavor grows – so make this first)
Squeeze of lemon
Dash of Garlic salt
