The Best and Healthiest 3 Ingredient Pancake Recipe Ever

I dare you to make these. Please. Everyone is on a health kick these days but the taste component seems to fall flat. I rediscovered these visiting my Mom. She used to make these for me when I was a kid. I didn’t have time for a gourmet photo, my 9 month old was too busy gobbling them up and I was busy helping her. They are great cold as well.

Into the whole baby lead weaning deal? These pancakes are great to add to your growing list of “holy crap my baby loves this” list. Usually my kiddo does NOT take food from me, but she was so excited she wouldn’t hold the pancake (see photo for proof.) It has such a light and fluffy texture and has that extra hit of protein you wouldn’t expect from a pancake with the eggs and cottage cheese.

The Best & Healthiest 3 Ingredient Pancake Recipe
3 Eggs
1/2 carton of cottage cheese (so about a cup)
3 tablespoons of flour

Additionally you could add a splash of vanilla and a squeeze of lemon or cinnamon or top with berries.

Mix well, fry in pan or griddle with butter or whatever sort of butter substitute that blows your skirt up.

Yup, I’m into scrambles. There’s nothing that can’t be fixed with a few eggs. Well maybe not the squeak on the door in Evie’s room. This is a quick and easy lunch or dinner that I find to be extra tasty.

Veggies + Eggs = Problem Solved

Make a big batch, it’s great to get a few bites when you are on the go. I’m a new Mom of a two month old so know how time is important.

Broccoli
Zucchini
Red Pepper
(or whatever veggies you have available)
Olive Oil
Salt & Pepper
Minced Garlic (optional)
5-6 Eggs

I’m rotten at measuring and just chop up what looks will fit in my pan. Heat up the olive oil, toss in some crushed garlic (yes mine is from the jar in a fridge).

Broccoli first since it takes the longest to cook, chop up the red pepper as the broccoli is cooking. Then chop the zucchini and add. Cover with a lid. Crack 5 eggs or 6 or 7 if you have more people or like more egg. Beat them with a fork, not at chess and add. Season with salt and pepper to taste and mix eggs around until cooked.

DON’T forget the salt and pepper they make all the difference.

If you are feeling dangerous add some parmesan cheese. Or regular cheese. If you are feeling healthy add some beans. I had to sneak in some bacon once to get my husband to eat it. Whatever works! Extras go in the fridge for later.

Veggie Bacon Egg Scramble Lunch

 

 Meat + Veggies + Eggs + Lil’ Cheese = Fist pump for my taste buds and belly

2 mushrooms diced

1 small zucchini

1/4 red pepper

Two handfuls of spinach

2 eggs

2 pieces pre cooked bacon diced

Fry up the veggies, fry up the eggs, nuke the bacon in the microwave, chop up the bacon. Take everything out and mix on your plate. Add cheese if you want. Cook up the spinach, sprinkle with Parmesan if you want!

The Best Avocado & Egg Breakfast Sandwich

THE TASTIEST BREAKFAST SANDWICH
I’m on an egg and avocado kick – if you’ve never tried it, it’s time to start.

Toast (I use Ezekiel Bread 4:9 – the healthier sprouted stuff which surprise! tastes great)
Mushed avocado
1 Egg
Garlic Salt (otpional) or Salt and Pepper
Mushrooms
Sriracha Sauce
Onions and Bacon are optional

STEP 1: Toast your toast
STEP 2: Mush up about half and avocado sprinkle with garlic salt
STEP 3: Add a little butter then fry up the mushrooms (and onions)
STEP 4: In the same pan, move the almost done veggies to the side then fry up your egg to your liking (a little runny in the middle is the best) add seasonings of your liking

LAYER – Toast + Avocado Spread + Egg + Toppings (mushroom, onion, bacon)

STEP 5: Sprinkle with Sriracha Sauce  (not shown because I started eating it right away!)

Healthy yet Delicious Apple Oatmeal

This takes some time so I’d recommend doing it the night before or on a Sunday if time (like many of us) tends to be short. If you are looking to mix up your breakfast routine and include a healthy option – check this out. Why steel cut oats? I love it because it fills me up and I don’t get hungry for a long time.  Check out this easy chart to see why.

1 Apple
Handful of Walnuts
Cinnamon (possibly sugar or Penzey’s Cinnamon Sugar mix)
Milk

Depending on the size of the batch you want to make  you may need more or less. I followed the recipe for a whole batch (I usually cut it in half.) This way there are plenty of leftovers for breakfast that week. If you put each on in an individual container, all you have to do it grab it and go in the morning.

STEP 1: Get the Steel Cut Oats cooking, they take about 20 minutes, read the directions and don’t forget to stir more towards the end.

STEP 2: Grate the apple. Don’t slice or chop, this makes a real difference in how it tastes.

STEP 3: Chop yer nuts – walnuts in my opinion makes the most sense with this flavor combination

STEP 4: Combine apple & walnuts with steel cut oats in bowl top it off with milk and stir

STEP 5: Top with cinnamon and sugar mix the whole thing up. Try some and realize how you are getting hints of apple crisp here. It’s an apple, walnut, crunchy oat flavored goodness that surprisingly fills you up quick and keeps you full for a long time and doesn’t compromise on flavor.

STEP 6: That whole batch could be consumed by five people so mix it up, and put some in a smaller dish and the rest for breakfast for the week. Don’t forget to add extra cinnamon and sugar on yours. Yum!

Yes! Juicing is a way to handle that.

1. It’s best to drink it fresh – that’s what everyone hammers. Fresh, fresh, fresh! But what about those of us who are busy? In a perfect world we’d have more time (or live on Mercury where each day on Mercury lasts as long as 58 days, 15 hours on Earth.)

Plastic bottles tend to stain and hold on to the juice pulp much more so than glass. I purchased a 6 pack of GLASS BOTTLES from Amazon. (Which I now use for iced tea, coffee, water bottles, you get the idea. I just chuck them in the dishwasher, it’s an easy clean and they don’t have the chemicals that plastics do. Very handy. You could also buy some mason jars instead.)

2. Okay, gather your veggies, in this case I have two different “flavors” I’m going to make. Gather your veggies & fruit! Obviously you need a juicer as well.

1. 2 big bags of carrots
2. Bag of green apples (least amount of sugar in green apples.)
3. Two bunches of Kale (they don’t create a lot of juice, very dense)
4. 2-4 Cucumbers (they were out at my store so buy more than it shows in the photo – cucumbers make up for the Kale, it’s a good balance.)
5. Secret Weapons of tastiness: Lemon & Ginger
6. Less fruit is better (less sugar) – wash well, try not to peel anything  if you can, a lot of the nutrients are close to the skin or in the skin.

3. ORANGE SUNRISE
Juice one bag of carrots
Half a lemon  rind and all)
Chunk of ginger
3-4 Granny Smith apples (not shown below)

4. POUR juice in bottles, clean your juicer and repeat.
The lemon is a great natural preservative and the ginger is not only extremely healthy for you, it adds a rich flavor. Adding a little water at the end 10-20 ml is a helpful way to make your juice go a little farther and may help decrease the flavor if it’s too intense for you.

5. GREEN MACHINE
1-2 buches of Kale (and or spinach)
3-5 Granny Smith apples
1/2 Lemon – rind and all
Chunk of ginger root
2-3 Cucumbers
OPTIONAL: Celery – WARNING: I personally cannot handle juiced celery. I find the flavor a bit too strong and have real problems drinking it. (TMI – my gag reflex kicks in and my body just does NOT like celery juice. So I don’t use it but others have no problem with it. If you hate the juice flavor you made you aren’t going to drink it!

6. DONE! Store and choose your flavor.
(Note: This produced about 2-3 more bottles but the two of us drank those for breakfast.)
It’s nice to have an option. You could just chuck everything together, but I like variety. Lots of tea and water throughout the day for me. It was explained to me that giving your body a day off from digesting food, gives it time to repair and focus on other parts of your body.

7. Tips
Sipping instead of chugging helped me feel fuller longer. Lots of water, lots of peppermint tea for me. A book helped me out saying if you eat an early dinner before 6pm then get up in the morning, you’ve technically “fasted” for 12 hours already. So you are halfway there!

For beginners, try it over a weekend, start Friday and try it for 24 or 36 hours. Your first meal should be a light one. It does take some will power but I was very surprised on how NOT hungry I was and I get low blood sugar. It also helps thinking of all those times you did have a little too much fun and you are giving your body a break. Remember this isn’t a permanent diet, just a well deserved toxin break.
